Banana Pancakes

This is a simple easy and healthy way to make pancakes which only uses 2 ingredients. Often pre-made pancake mixes are filled with lots of additives, preservatives, emulsifiers and not so ‘whole’ ingredients’. I find that this recipe is super easy to make, kids (and adults love it), it is filling and made with whole ingredients.


  • 1 sugar banana

  • 2 organic free range egg

  • Coconut oil to cook in

  • Maple syrup to drizzle on top

  • Frozen mixed berries (optional)


  • Crack the eggs and put them in a pyrex cup with the peeled banana.

  • Blitz up the banana and eggs so that the mixture is uniform and flufffy. 

  • Heat some coconut oil in a pan. 

  • Once the coconut oil is hot, add in some of the mixture. I like to make smaller pancakes but you can do whatever size you like.

  • Once one side is brown, flip the pancakes over to cook on the other side. 

  • Serve once cooked on both sides.

  • Options: Serve with a little bit of maple syrup or rice malt syrup with frozen or fresh berries.
