Super easy coconut choc slice recipe taken from ‘The Good Life’ by Sally Obermeder & Maha Koraiem.
This slice is dairy free, gluten free, nut free, Paleo, vegan and vegetarian….and still tastes AMAZING!!!
1/2 cup coconut oil
5 tablespoons of rice malt syrup
1/2 cup cacao powder
1 1/2 cups of shredded coconut
Melt the coconut oil in a saucepan over low heat.
When mixed, remove from the heat, add the rice malt syrup, whisking briskly until well combined.
Add the cacao powder, stirring well until completely mixed through.
Add the shredded coconut and stir through the chocolate mixture.
Spread evenly on a lined baking tray and freeze for 30-60 minutes or until set.
Cut into pieces and serve immediately or store in the fridge/freezer in an airtight container.
