Banana Pancakes

This is a simple easy and healthy way to make pancakes which only uses 2 ingredients. Often pre-made pancake mixes are filled with lots of additives, preservatives, emulsifiers and not so ‘whole’ ingredients’. I find that this recipe is super easy to make, kids (and adults love it), it is filling and made with whole ingredients.

Ingredients:  

  • 1 sugar banana

  • 2 organic free range egg

  • Coconut oil to cook in

  • Maple syrup to drizzle on top

  • Frozen mixed berries (optional)

Directions: 

  1. Crack the eggs and put them in a pyrex cup with the peeled banana.

  2. Blitz up the banana and eggs so that the mixture is uniform and flufffy. 

  3. Heat some coconut oil in a pan. 

  4. Once the coconut oil is hot, add in some of the mixture. I like to make smaller pancakes but you can do whatever size you like.

  5. Once one side is brown, flip the pancakes over to cook on the other side. 

  6. Serve once cooked on both sides.

  7. Options: Serve with a little bit of maple syrup or rice malt syrup with frozen or fresh berries.
