Cacoa, coconut and date balls
Healthy snacks are hard to find in the supermarket so I like to make my own. This way I know what the ingredients are and how it is prepared. Plus if you have kids, it is fun to involve them in the whole process!
12 dates (this is what the recipe has but I actually only have 8 to use and I found it was sweet enough for me but experiment and see what works for you).
1 cup almond meal
1/2 cup shredded coconut & 1/3 cup extra
1/3 cup coconut oil
1/3 cup cacoa powder
1 tablespoon chia seeds
Place dates in a bowl and cover with water. Leave to stand for one hour, then strain and discard the seeds.
Process dates, almonds, shredded coconut, coconut oil, cacoa powder and chia seeds until the mixture comes together.
Transfer to a bowl and leave to stand for 20 mins to allow the chia seeds to soften.
Place the extra shredded coconut in a shallow bowl.
Roll level tablespoons of mixture into balls. Roll in shredded coconut to coat.
Store in the fridge or freezer and try to not eat them all at once!!
